
Baymax's Mochi Doughnut Medley
These delightful, chewy doughnuts are inspired by the inflatable, huggable healthcare companion. They're soft, slightly sweet, and perfect for sharing with friends (or your personal health assistant). A medley of glazes adds a pop of color and flavor, reminiscent of Baymax's comforting presence.

In a large bowl, whisk together the glutinous rice flour, all-purpose flour, granulated sugar, baking powder, and salt.

In a separate medium bowl, whisk together the whole milk, egg, and melted butter until well combined.

Pour the wet ingredients into the dry ingredients and mix with a spatula until a shaggy dough forms. Do not overmix.

Heat about 3 inches of vegetable oil in a large heavy-bottomed pot or Dutch oven over medium heat until it reaches 350°F (175°C).

Using two spoons or a small ice cream scoop, carefully drop tablespoon-sized portions of dough into the hot oil. Fry in batches, being careful not to overcrowd the pot.

Fry for 3-5 minutes, turning occasionally, until golden brown and cooked through. The doughnuts will puff up significantly.

Remove the doughnuts with a slotted spoon and transfer them to a wire rack lined with paper towels to drain excess oil.

While the doughnuts are cooling, prepare the glazes: In a small bowl, whisk together the confectioners' sugar, milk/water, and vanilla extract until smooth. For colored glazes, divide the mixture and stir in a drop or two of food coloring into each portion.

Dip the cooled doughnuts into the glazes, allowing excess to drip off, and place back on the wire rack for the glazes to set.
