Directions

  1. 1

Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

  2. 2

In a large bowl, whisk together eggs, milk, 1/2 cup sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

  3. 3

Add the cubed bread to the egg mixture, tossing gently to ensure all pieces are saturated. Let stand for 10-15 minutes, allowing bread to absorb the liquid.

  4. 4

Stir in the melted butter. Pour the bread mixture into the prepared baking dish, spreading evenly.

  5. 5

Bake for 40-50 minutes, or until golden brown and a knife inserted into the center comes out clean. The pudding should be set.

  6. 6

While the pudding bakes, prepare the berry compote. In a small saucepan, combine mixed berries, 2 tablespoons sugar, and lemon juice.

  7. 7

Cook over medium heat, stirring occasionally, until berries soften and release their juices, and the mixture thickens slightly, about 8-10 minutes.

  8. 8

Let the bread pudding cool slightly before serving. Dust with powdered sugar, if desired, and serve warm with the wild berry compote.
