Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season beef cubes with salt and pepper, then brown in batches on all sides. Remove beef and set aside.

Add diced onion and bell peppers to the pot, reducing heat to medium. Sauté for 5-7 minutes until softened. Add minced garlic and cook for another minute until fragrant.

Stir in chili powder, ground cumin, smoked paprika, and cayenne pepper. Cook for 1-2 minutes, stirring constantly, until fragrant.
