
Gelatinous Gooey Grub
This playful dessert is a vibrant, wobbly, and utterly delicious treat, inspired by our favorite amorphous, one-eyed friend. Layers of sweet, fruit-flavored gelatin are interspersed with creamy vanilla bean custard, creating a dessert that's both fun to eat and surprisingly elegant. It's a perfect conversation starter for any gathering.

First, prepare the strawberry gelatin: In a medium bowl, dissolve the strawberry gelatin in 1 cup boiling water, stirring for at least 2 minutes until fully dissolved.

Stir in 1 cup cold water. Pour half of the strawberry gelatin into a 9x13 inch glass baking dish and refrigerate for 30-45 minutes, or until just set but not firm.

While the first layer chills, prepare the custard: In a medium saucepan, whisk together the sugar and cornstarch. In a separate bowl, whisk the egg yolks with a splash of milk.

Gradually whisk in the remaining milk into the sugar mixture in the saucepan. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle simmer. Remove from heat.

Temper the egg yolks by slowly pouring about half of the hot milk mixture into the yolks, whisking constantly. Then, pour the egg yolk mixture back into the saucepan with the remaining hot milk mixture. Return to low heat and cook for 1-2 minutes, stirring, until thickened.

Remove from heat, stir in vanilla extract and salt. Pour the custard over the set strawberry gelatin layer. Refrigerate for 45-60 minutes, or until the custard is set.

Next, prepare the lime gelatin: In a separate medium bowl, dissolve the lime gelatin in 1 cup boiling water, stirring for at least 2 minutes until fully dissolved.

Stir in 1 cup cold water. Carefully pour the lime gelatin over the chilled custard layer.

Refrigerate for at least 4 hours, or until completely firm. Once set, cut into squares and serve chilled. Garnish with whipped cream if desired.
