
Odin's Eye Mead Glazed Apple Fritters
Inspired by the sweet treats that might be found in a bustling Norse settlement, these apple fritters are crispy on the outside and tender within, laden with chunks of spiced apple and drenched in a warm, honeyed glaze. A delightful way to start a day or enjoy as a celebratory dessert.

In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.

In a separate medium bowl, whisk together the egg, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.

Fold in the finely diced apples until evenly distributed throughout the batter.

Heat 3-4 inches of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C). Use a thermometer to monitor the temperature.

Carefully drop spoonfuls of batter (about 1.5-2 tablespoons each) into the hot oil. Do not overcrowd the pot; fry in batches.
