If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

In a large bowl, combine the olive oil, fresh lemon juice, smoked paprika, ground coriander, ground cumin, cayenne pepper (if using), and minced garlic.

Season the marinade with salt and freshly ground black pepper.

Add the cut chicken pieces to the marinade, ensuring all pieces are thoroughly coated. Cover and refrigerate for at least 1 hour, or preferably 4 hours, for best flavor.

Preheat your grill to medium-high heat (375-400°F / 190-200°C).

Thread the marinated chicken pieces alternately with the bell pepper and red onion pieces onto the skewers.
