Directions

  1. 1

In a medium bowl, combine the minced shrimp, grated ginger, minced garlic, sesame oil, diced bamboo shoots, diced water chestnuts, soy sauce, and white pepper, mixing well to ensure all ingredients are evenly distributed.

  2. 2

Lay out a wonton wrapper on a clean surface; spoon about 1 teaspoon of the shrimp mixture into the center of the wrapper.

  3. 3

Moisten the edges of the wrapper with a little water using your finger, then fold the wrapper in half to form a triangle or gather the edges to create a pleated purse shape, pressing firmly to seal.

  4. 4

Repeat with the remaining shrimp mixture and wonton wrappers, placing the finished dumplings on a parchment-lined baking sheet to prevent sticking.

  5. 5

Fill a large pot with about 2 inches of water, bring to a gentle boil, then reduce heat to a simmer.

  6. 6

Carefully place a few dumplings into a bamboo steamer basket (or a metal steamer insert), ensuring they are not overcrowded, and steam for 6-8 minutes, or until the shrimp turns opaque and the wrappers are tender.

  7. 7

Remove steamed dumplings to a serving platter and keep warm while steaming the remaining batches.

  8. 8

Garnish the steamed shrimp dumplings with fresh cilantro and serve immediately with sweet chili sauce for dipping.
