
Road Trip Rally Roulade

Tender seasoned chicken is rolled around a flavorful stuffing of sautéed vegetables and sharp cheese, then baked until golden. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Place each chicken breast between two pieces of plastic wrap and pound to about 1/4 inch thickness.

Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper for 5 minutes until softened.

Add minced garlic and chopped spinach, cook for another 2-3 minutes until spinach is wilted. Remove from heat and let cool slightly.

In a small bowl, combine the cooled vegetable mixture with shredded cheddar cheese, breadcrumbs, and Italian seasoning.
