Directions

  1. 1

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. 2

Place each chicken breast between two pieces of plastic wrap and pound to about 1/4 inch thickness.

  3. 3

Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper for 5 minutes until softened.

  4. 4

Add minced garlic and chopped spinach, cook for another 2-3 minutes until spinach is wilted. Remove from heat and let cool slightly.

  5. 5

In a small bowl, combine the cooled vegetable mixture with shredded cheddar cheese, breadcrumbs, and Italian seasoning.

  6. 6

Season both sides of the pounded chicken breasts with salt and pepper.

  7. 7

Spoon an equal amount of the stuffing mixture onto one end of each chicken breast.

  8. 8

Carefully roll up each chicken breast tightly and secure with kitchen twine or toothpicks.

  9. 9

Place the roulades seam-side down in the prepared baking dish. Brush with melted butter and pour chicken broth around them.

  10. 10

Bake for 25-30 minutes, or until chicken is cooked through and lightly golden. An instant-read thermometer should register 165°F (74°C).

  11. 11

Remove from oven, let rest for 5 minutes before slicing and serving. Remove twine or toothpicks before serving.
