    In a medium bowl, whisk together the eggs, milk or cream, a pinch of salt, and pepper until just combined and slightly frothy.

    In a separate small bowl, combine the finely chopped fresh herbs with the olive oil and 1 tablespoon of water to create a loose paste.

    Heat an 8-inch non-stick skillet over medium-low heat. Add the unsalted butter and swirl to coat the bottom of the pan.

    Once the butter is melted and sizzling, pour the egg mixture into the hot skillet.

    As the edges of the omelet begin to set, gently push the cooked egg from the edges towards the center, allowing the uncooked egg to flow underneath.

    When the top is mostly set but still slightly moist, drizzle the herb paste in a circular or spiral pattern over one half of the omelet.

    Allow to cook for another minute until the herbs are slightly warmed and fragrant.

    Carefully fold the plain half of the omelet over the herb-swirled half.
