
Mort's Mango Tango Chicken Skewers
Inspired by a certain adorable, big-eyed lemur's favorite fruit, these chicken skewers are bursting with sweet and savory flavors. Marinated chicken pieces are threaded with fresh mango and bell peppers, then grilled to perfection, resulting in a juicy, caramelized exterior and tender interior. A delightful main course.

In a medium bowl, whisk together the lime juice, olive oil, honey, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using).

Add the cubed chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

Preheat your grill to medium-high heat (375-400°F).

Thread the marinated chicken, mango cubes, red bell pepper pieces, and orange bell pepper pieces onto the soaked wooden skewers, alternating ingredients.

Place the skewers on the preheated grill. Grill for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
