
Cassim's Golden Palm Date Bites
Inspired by the longing for lost treasures and found family, these simple yet elegant date bites are a sweet indulgence. Medjool dates are filled with creamy nut butter and crunchy seeds, then dipped in melted chocolate, creating a delightful contrast of textures and flavors. They're quick enough to whip up for a quick escape or a celebratory feast.

Carefully slice each pitted Medjool date lengthwise down one side, being careful not to cut all the way through, creating a small pocket.

In a small bowl, combine the almond butter, pumpkin seeds, and sesame seeds. Mix until well incorporated.

Using a small spoon or your fingers, fill each date with approximately 1 teaspoon of the almond butter mixture.

Line a baking sheet with parchment paper. Place the filled dates on the prepared baking sheet and set aside.

Melt the dark chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring until smooth, or over a double boiler. If desired, stir in the coconut oil for a smoother consistency.

Dip each filled date halfway into the melted chocolate, allowing any excess to drip off. Alternatively, drizzle chocolate over the dates using a spoon.

Place the chocolate-dipped dates back on the parchment-lined baking sheet. Sprinkle with a tiny pinch of flaky sea salt immediately.

Refrigerate for at least 30 minutes, or until the chocolate has set completely.
