Directions

    Preheat oven to 325°F (160°C).

    Pat the pork shoulder dry with paper towels. In a small bowl, combine olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper to create a rub.

    Generously rub the seasoning mixture all over the pork shoulder, ensuring it's well coated.

    Place the seasoned pork roast in a large Dutch oven or a deep roasting pan.

    Arrange the carrots, parsnips, sweet potatoes, and onion wedges around the pork roast in the pan.

    Pour the chicken or vegetable broth into the bottom of the pan.

    Cover the Dutch oven or roasting pan tightly with its lid or aluminum foil.

    Roast for 3 to 3.5 hours, or until the pork is fork-tender and easily pulls apart. The internal temperature should reach 190°F (88°C).

    Remove the lid or foil during the last 30 minutes of cooking to allow the vegetables to caramelize slightly and the pork to brown.
