General's Galactic Roast with Root Vegetable Medley
A hearty and robust dish designed to fuel even the most demanding intergalactic generals. This slow-roasted pork shoulder, seasoned with earthy herbs, is cooked until melt-in-your-mouth tender, alongside a colorful medley of root vegetables. It’s a substantial meal that’s surprisingly easy to achieve.

Directions
- 1
Preheat oven to 325°F (160°C).
- 2
Pat the pork shoulder dry with paper towels. In a small bowl, combine olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper to create a rub.
- 3
Generously rub the seasoning mixture all over the pork shoulder, ensuring it's well coated.
- 4
Place the seasoned pork roast in a large Dutch oven or a deep roasting pan.
- 5
Arrange the carrots, parsnips, sweet potatoes, and onion wedges around the pork roast in the pan.
- 6
Pour the chicken or vegetable broth into the bottom of the pan.
- 7
Cover the Dutch oven or roasting pan tightly with its lid or aluminum foil.
- 8
Roast for 3 to 3.5 hours, or until the pork is fork-tender and easily pulls apart. The internal temperature should reach 190°F (88°C).
- 9
Remove the lid or foil during the last 30 minutes of cooking to allow the vegetables to caramelize slightly and the pork to brown.
- 10
Once cooked, carefully remove the pork from the pan and let it rest on a cutting board for 15-20 minutes before shredding or slicing.
- 11
Serve the tender pork with the roasted root vegetable medley, drizzling with any pan juices.
